A few weeks ago I asked my cousin Melinda in California for some new recipes to try, because I was getting a little tired of my same old cake and buttercream recipes.
She suggested a whipped cream frosting, and at first I was skeptical because it seemed too easy.
I tried it on one of Peter's birthday cakes and I was hooked! I've never been a fan of white cake, but it was divine with this whipped cream frosting!
So for my birthday I made a simple white cake, with strawberry mousse filling and topped it with whipped cream frosting. It is easy to make, easy to spread and so delicious!
Whipped Cream
1 cup of heavy whipping cream
1 teaspoon of vanilla extract
6 tablespoons of sugar
Put them in your mixer bowl (preferably you want a cold bowl and beaters)
and just whip it on high until it is thick and whipped cream texture.
And it is great for so much more than cakes. I make this (adjusting the amount of sugar) to top pies, crisps, cobblers, you name it.
On apple desserts add a pinch of cinnamon for extra flavor)
