I wanted to tell you about my day!
I guess the Southern California fires have been heating up the whole west coast! It’s 76 degrees here! I am in shock! Of course this means we got no school work done, we played outside instead, walked over to the big park and played there.

I even pulled out my camera! (The layer of dust on it was so sad!!!) And possibly got a Christmas card picture! (Since who knows when I’ll bring my camera out again)
When we got back I wanted sweets but wanted to eat healthy for baby, so we made cookies. We tried these a couple weeks ago and they are SOOO awesome!

Sweet Potato Cookies
1 cup cooked sweet potato or pumpkin
1/2 cup butter, softened
3/4 cup maple syrup
1 egg
1/2 teaspoon sea salt
1/2 teaspoon pie spice
1/2 teaspoon ground nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups flour (I use whole wheat)
1/2 cup chocolate chips
1/2 cup pecans, chopped
1/2 cup butter, softened
3/4 cup maple syrup
1 egg
1/2 teaspoon sea salt
1/2 teaspoon pie spice
1/2 teaspoon ground nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups flour (I use whole wheat)
1/2 cup chocolate chips
1/2 cup pecans, chopped
Form into walnut sized balls and place on buttered cookie sheets(we use pizza stones) . Bake at 325 degrees for about 20 minutes. Let cool completely before removing to an airtight container for storage. Store in refrigerator.
